Chamomile & Honey Roasted Peaches
Ingredients
• 4 ripe peaches, halved and pitted
• 2 tablespoons butter, melted
• 2 tablespoons honey
• 2 teaspoons Organic Culinary Chamomile Flowers
• ½ teaspoon pure vanilla extract
• Pinch of sea salt
• Vanilla ice cream, whipped cream, or Greek yogurt for serving (optional)
• Extra chamomile flowers for garnish (optional)
Directions:
Preheat oven to 375°F (190°C)
1. Prepare the Chamomile Honey Infusion: In a small saucepan or heatproof bowl, combine the melted butter, honey, vanilla extract, and chamomile flowers. Allow the mixture to gently warm for a few minutes so the chamomile can release its delicate floral flavour. For a stronger infusion, let the mixture sit for 10–15 minutes before straining. For a more rustic presentation, leave the chamomile blossoms in the mixture and allow them to roast with the peaches.
2. Prepare the Peaches:.Place the peach halves cut-side up in a baking dish or on a parchment-lined baking sheet. Brush generously with the chamomile honey mixture, making sure each peach is lightly coated. Sprinkle with a small pinch of sea salt to balance the sweetness and enhance the natural flavour of the fruit.
3. Roast Until Golden: Roast the peaches for 20–25 minutes, or until they become tender, juicy, and lightly caramelized around the edges. Baste once or twice during roasting with the warm honey juices collected in the pan. The peaches are ready when they can easily be pierced with a fork and their natural juices have combined with the chamomile honey to create a beautiful floral syrup.
4. Serve & Enjoy: Serve warm with a scoop of vanilla ice cream, a dollop of whipped cream, or creamy Greek yogurt. Spoon the chamomile-infused juices over top and finish with a light sprinkle of chamomile blossoms.
These roasted peaches are best enjoyed fresh but can also be gently reheated and served the following day.
