In the kitchen, calendula’s slightly peppery, earthy flavour and vibrant yellow hue make it a charming “faux saffron”, perfect for adding colour and warmth to both sweet and savory dishes.

Iced Lavender Lemon Sipper
1. Golden Calendula Rice
Brew strong calendula tea and use it instead of water to cook rice, quinoa, or couscous.
Stir in a few petals after cooking for colour and subtle flavour.
Optional: add olive oil, toasted nuts, or fresh herbs for a vibrant side dish.
2. Floral Honey or Sugar
Mix dried petals into honey for drizzling over yogurt, toast, or cheese.
Combine with sugar to create a botanical finishing sugar—perfect for muffins, scones, or desserts.
3. Sun-Kissed Soup or Stew
Add petals to vegetable soups, stews, or creamy purees in the last 5–10 minutes of cooking.
Brightens the dish naturally and adds a boost of antioxidants.
4. Golden Floral Tea Blend
Brew 2 teaspoons of dried calendula per cup in hot water for 5–10 minutes.
Combine with chamomile, lemon balm, or mint for a soothing, anti-inflammatory tea.
Sweeten with honey or maple syrup. Serve hot or chilled.
5. DIY Calendula Oil or Skin Balm
Fill a small jar with dried petals and cover with neutral oil (sunflower or olive).
Let steep in a sunny spot for 2–3 weeks, shaking occasionally.
Strain and use as a nourishing skin oil or mix with beeswax to make a gentle balm.

Hot Tea:
• Bring fresh, cold water to a rolling boil (100°C / 212°F).
• Place 1 scant teaspoon of lavender per 8oz (237ml) cup into a mug or teapot.
• Pour boiled water over the lavender buds and steep for 5–10 minutes, longer for maximum benefits.
• Strain and sweeten if desired.
Iced Tea:
• Bring fresh, cold water to a rolling boil (100°C / 212°F).
• Place 2 teaspoons of lavender buds per 8oz (237ml) cup into a teapot or heat-proof pitcher.
• Pour boiled water over lavender buds and steep 30 minutes
• Strain, sweeten to taste and chill. Lovely with the addition of a good squeeze of lemon.
