Edible Flower Shortbread Cookies

A buttery, blossom-topped shortbread finished with sparkling sugar—just as lovely beside a teacup as it is next to the hearth with a bottle of milk on Christmas Eve. Santa loves the floral sparkle!

INGREDIENTS
• 1 cup unsalted butter, softened
• ½ cup powdered sugar
• 1 tsp vanilla extract
• 2 cups all-purpose flour
• Pinch of fine sea salt
• Organic Edible dried flowers or Sprinkles
• 1 egg white, lightly beaten with 1 teaspoon water
• Coarse raw sugar for sprinkling
• Optional: 1–2 tsp lemon zest

DIRECTIONS
• Cream butter and powdered sugar until pale and fluffy
• Mix in vanilla (and lemon zest, if using)
• Add flour and salt; mix until a soft dough forms.
• Chill 20–30 minutes
• Roll to ¼ inch thick and cut into shapes
• Place cookies on a parchment baking sheet, and gently press flowers onto each cookie
• Lightly brush the flowers and cookie with the egg white. This will help them adhere to the cookie and protect them during baking
• Sprinkle with coarse sugar
• Bake at 325°F (165°C) for 12–15 minutes, or until edges are just turning golden.
• Move cookies to a cooling rack and let them  cool completely so the flowers and sugar set beautifully
