Roasted Carrots with Apricot Lavender Glaze

Recipe: Apricot Lavender Glaze for Roasted Carrots or Squash – A sweet-floral glaze that brings out the natural sweetness of roasted carrots or squash. Earthy, sweet, caramelized and delicious! Perfect for a summer supper or a cosy harvest meal.

Ingredients:
• 2 tbsp. Apricot Lavender Jam
• 1 tbsp. olive oil or melted butter
• 1 – 2 tsps. apple cider vinegar or fresh orange juice
• Pinch of salt
Optional: Fresh thyme or a sprinkle of chili flakes for heat

How To:
1. Toss peeled carrots or cubed squash with olive oil and a bit of salt. Roast at 400°F (200°C) until nearly tender (20–25 mins).
2.  In a small bowl, mix the jam, vinegar or juice, and a touch more oil or butter until smooth.
3. Brush the glaze over the veggies and return to the oven for another 10–15 minutes, or until caramelized and golden.
4. Garnish with herbs or fresh edible petals if desired.
