Pumpkin Spice Harvest Loaf RecipePumpkin Spice Harvest Loaf

MAKES 1 LOAF OR 12 – 16 MUFFINS

INGREDIENTS WITH STEP-BY-STEP DIRECTIONS

1. Adjust the oven rack to the lower third position of the oven and preheat to 350°F degrees.

If making a loaf: Lightly grease and flour a 9×5inch loaf pan OR line with parchment paper OR spray with non-stick spray. Set loaf pan aside.
If making muffins: Line the muffin tins with paper muffin cups or spray with non-stick spray. Set aside.

2. In a large bowl whisk together and set aside:
• 1 and 3/4 cups all-purpose flour (spoon and level)
• 1 teaspoon baking soda
• 1 teaspoon baking powder
• 1 ½ teaspoons Ground Chai Spice
• ¼ teaspoon nutmeg, freshly grated
• 2 teaspoons ground cinnamon
• 3/4 teaspoon salt

3. Next in a medium bowl whisk together until well combined:
• 2 large eggs, at room temperature
• 2/3 cup granulated sugar
• 1/2 cup packed dark brown sugar (sub light brown)
• 1 teaspoon pure vanilla
• 2 tablespoons of pure maple syrup
Once well combined stir in:
• 1 tablespoon of grated orange zest
• 1/2 cup of carrot, finely grated
• 1 ½ cups (340g) pure pumpkin puree, canned or fresh (NOT pumpkin pie filling) If using fresh pumpkin make sure it’s not too wet
• 1/2 cup coconut oil, melted OR avocado oil

4. Next: Pour the wet ingredients into the dry ingredients and gently mix together using a spatula or wooden spoon. Do not over mix!

5. OPTIONAL BUT RECOMMENDED: Baked Pumpkin Spice Harvest Loaf and a cup of tea
• Toss 2/3 cup of raisins in 1 teaspoon of flour. Add the raisins to the batter and gently fold in to combine

6. Pour the batter into the prepared loaf pan OR for muffins scoop/divide the batter into muffin tins using an ice cream or cookie scoop

7. Next:
• Sprinkle 1/4 cup of raw pepitas (pumpkin seeds) over the loaf and top with a generous sprinkle of demerara or coarse sugar
OR
• If making muffins: Sprinkle the pepitas over each individual muffin and top with a sprinkle of demerara or coarse sugar
OR Use the optional streusel topping recipe below

8. For a Loaf: Bake for approximately 60 – 65 minutes or until a toothpick inserted in the center comes out clean (with a few moist crumbs) Cover the loaf with aluminum foil half way through baking if the top is getting too brown)
OR
For Muffins: Bake for approximately 22 – 26 minutes (depending on the size of the muffins) or until a toothpick inserted in the center comes out clean. Begin checking at 22 minutes.

10. Once cooled completely, remove from the pan and enjoy with your favourite cup of tea!

To Store:
Wrap the loaf and store in the fridge for up to a week or freeze up to 3 months. Muffins can be stored in a container in the fridge or freezer.

 

OPTIONAL STREUSEL TOPPING FOR MUFFINS: Pumkin Spice Harvest Cupcakes
• 1/4 cup all-purpose flour
• 1/4 cup old fashioned oatmeal
• 2 tablespoons granulated sugar
• 2 tablespoons dark brown sugar (sub light brown sugar)
• 2 tablespoons of pepitas
• ½ teaspoon Ground Chai Spice
• 1 teaspoon ground cinnamon
• pinch of salt
• 1/4 cup unsalted butter, melted

• In a small dish, stir together flour, oatmeal, sugars, spices, and salt. Next, stir in melted butter until crumbly. Top each muffin with a few crumbles of streusel mixture. Bake as directed above.
