Using either a homemade vanilla sponge or a favourite bakery cake, this recipe transforms an everyday cake into something special. A floral tea syrup made with our Hibiscus Citrus Garden tea is spooned generously over the sponge, allowing the bright notes of hibiscus, citrus, orchard fruit, and rose petals to gently soak into every layer. Once absorbed, the cake is finished with a delicate citrus glaze and decorated with fresh edible flowers and your choice of berries.

Hibiscus Citrus Garden Tea Syrup Drizzle Cake Recipe
For the Cake:
•1 vanilla sponge cake or pound cake (homemade or store-bought)

For the Tea Syrup: (Double the recipe for a larger cake or extra drizzle)
• 1 cup strongly brewed Hibiscus Citrus Garden tea (3-4  heaped teaspoons per 1 cup water)
• ½ cup organic cane sugar

For Decorating:
• Fresh edible flowers such as rose petals, pansies, calendula
• Fresh strawberries or berries of choice

How To:
Step 1: Make the Tea Syrup
• Brew strong Hibiscus Citrus Garden tea
• Combine the brewed tea and sugar in a small saucepan and simmer gently for 5–6 minutes until the sugar has dissolved and the mixture has reduced slightly into a light floral syrup.
• Allow the syrup to cool slightly.

Step 2: Soak the Cake
• Place the sponge cake on a serving plate. Poke a few holes into the top of the cake with a skewer
• Using a spoon, slowly drizzle half the tea syrup over the top of cake, allowing it to soak into the sponge. Continue until the cake has absorbed the syrup and becomes lightly infused with the floral citrus flavours.

Step 3: Add the Final Drizzle
Once the syrup has settled into the cake, finish with the remaining drizzle of syrup over the top, letting it drip down the sides.

Step 4: Decorate
• Arrange fresh edible flowers and berries of choice over the cake just before serving.
