WHAT DO FLOWERS TASTE LIKE?
The flavour varies from sweet and spicy to mild and slightly bitter, or sour and lemony. Even varieties of the same plant can taste different from one another. Soil and weather conditions play a significant role in the floral flavour at harvest.
FLAVOUR PROFILE OF EDIBLE FLOWERS
Borage – Mild cucumber taste
Camellia – Mild sweet flavour, light, lemony, depending on variety
Calendula – Spicy, tangy, peppery
Chamomile – Notes of apple, earthy with a mellow honey-like sweetness
Cornflower – mildly sweet, neutral
Dianthus (pinks, mini carnations) – Sweet, floral with lovely notes of spice and clove
Fuchsia – Typically grown for their beauty, not flavour. Graceful. pendulous flowers in vivid colour combinations. Fuchsia have a mild, peppery, tangy flavour and while edible, are grown for visual impact rather than flavour
Honeysuckle – The nectar is floral and very sweet, like a sweet honeydew drop
Lavender – Sweet and highly floral with notes of lemon and citrus. Moderation is the key to using lavender
Lemon Verbena – A beautiful, vibrant lemon flavour without the sourness or acidity of lemons
Lilac – Sweet and floral with slight bitterness and astringency
Nasturtium – Spicy, peppery, slightly sweet
Pansy – Sweetly green and grassy
Peony – Taste similar to their fragrance. Sweetly floral with a hint of spice
Primrose – Sweet, tending to somewhat bland
Roses – A wide variety of flavours, mainly sweet and floral with subtle undertones of fruit, strawberry, raspberry, lemon and spice
Sweet Phlox (perennial) – Sweet, floral, with a hint of spice
Sweet Woodruff – Sweet and grassy with a hint of vanilla
Tuberous Begonias – Citrusy tending to slightly sour
Viola – Sweet with a lovely soft floral flavour
WHAT DO FLOWERING HERBS TASTE LIKE?
• The edible flowers of HERBS taste just like the mother plant, only milder. EXAMPLE: Chive blossoms have a mild onion flavour.
• Use the flowers of herbs in the same way and in the same dishes or drinks as you would the herb itself. Flowering herbs make a lovely finishing element to savoury dishes and cocktails
HOW TO STORE EDIBLE FLOWERS:
• TRANSPORT in a cooler if possible
• REFRIGERATE immediately upon arrival. Ideal storing temperature 2–5°C ( 36–41°F )
• LEAVE FLOWERS in original packaging. Lift one corner of the container to create airflow or with a pin, poke 5-6 air holes in the package to let excess moisture escape.
• DO NOT FREEZE – Freezing damages delicate petals. Only freeze if using to make ice cubes. Once thawed flowers become dark and mushy.
• SHELF LIFE– Best used within 1–3 days. Some varieties may last up to 5 -7 days with proper care.
