Rich dark chocolate sprinkled with aromatic rose petals makes this bark a heart healthy sweet treat you’ll want to share with your Valentine all year long! Ground cardamom adds a touch of exotic sweet spice to the bark which marries beautifully with the aromatic rose petals. Take it a step further and add roasted, salted pistachios for a wonderful trio of Middle Eastern flavours.

Enjoy this decadent chocolate on its own or serve alongside a glass of sparkling or sweeter wine. The effervescence or sweetness in these wines works beautifully with the bitterness of the chocolate by providing the necessary balance it needs.

Rose Petal Dark Chocolate Bark

MAKES ONE POUND OF CHOCOLATE BARK

INGREDIENTS
• 454 grams (16 oz.) of high quality dark chocolate (70-85%)
OR
• 340 grams of dark chocolate and 114 grams (4 oz.) of high quality semisweet chocolate
• 1/8 – 1/4 teaspoon of ground cardamon
• 1/8 teaspoon of pink Himalayan sea salt (if not using salted pistachios)
• ½ cup of organic dried rose petals
Optional: Roasted, salted pistachios

HOW TO
• Line a large sheet pan (or 2 smaller ones) with parchment paper and set aside
• Chop/break chocolate into pieces and melt in a heatproof bowl set over a pan of simmering water. (Be careful not to get any water in the chocolate or it will cease up.)
• Once melted remove from heat and stir in the ground cardamom and salt if using
• Pour the melted chocolate over the parchment paper and using a rubber spatula spread to ¼” thick
• Immediately sprinkle with rose petals and pistachios if using
• Set aside for a minimum of 2 hours until firm
• Break into pieces to serve
• Store in an airtight container at room temperature

TIPS
• Alternately you can melt the chocolate pieces using a microwave at 30 second intervals. Stir after each 30 seconds. Once chocolate is partially meted cut the time back to every 15 seconds until only a few small pieces of chocolate remain. Remove from microwave and continue to stir until chocolate is smooth and fully melted. Add another few seconds in the microwave if necessary but be careful as chocolate scorches easily.
