Keep cool this summer with healthy iced fruit tea lollies! Easy to make and delicious to slurp, you control the sugar and flavour. Turn them into adult lollies for the big kids or creamsicles and slushies for the little ones. No matter which version you make, you’ll want to keep a batch of these on hand all summer long!

Frozen Fruit Tea Lollies

 

INGREDIENTS
• 6 heaped teaspoons of Culinary Blossom Fruit Tea
• 1 cup raw sugar OR ½ cup honey
• 3 ½ cups pure water
• 1 cup frozen blueberries and raspberries (or berries of choice)
Optional:
– Juice of ½ lemon OR ½ lime
– Fresh mint or basil

INSTRUCTIONS
• Bring 1 cup of water to a boil. Lower heat and add in sugar OR honey. Gently stir until completely dissolved. This creates a simple syrup. Remove from heat and set aside to cool
• Add fruit tea to a large teapot or heat-proof container. Bring the remaining 2 ½ cups of water to a boil and pour over the tea. Cover and set aside to steep for at least 15 – 30 minutes
• Once steeped strain into a large glass measuring cup or bowl. Next, add the juice of ½ lemon OR lime if using, and stir in the simple syrup to taste
• Divide frozen berries (and herbs if using) into the ice lolly moulds. Fill with iced tea mixture
• Freeze until solid or overnight

SERVINGS
Makes 6 – 10 lollies (depending on the size of lolly moulds)

 

TIPS
• Use whichever local berries are in season. Pair them with a complimentary fruit tea. Example: Blueberries with Elderberry Hibiscus or Fraser Valley Blueberry teas
• For adult lollies and to keep the lollies from freezing too solid, add 2 OZ. (60 MLS) vodka at the same time as the simple syrup.
• For creamsicle lollies: Omit lemon/lime juice. Stir in ½ cup of full-fat yogurt and ½ cup of crushed berries. Pour into molds as per instructions above
• For slushies: Pour into an 8 X 8″ pan. Place in freezer and once the top is semi-frozen use a fork to ‘scrape’ along the top creating ice. Put back in the freezer and repeat the process until you have a mound of loosely scraped ice. Scoop into glasses, top with berries and enjoy!
