It’s blackberry season and there’s no better way to celebrate it than with this refreshing sipper! The only make-ahead part is the syrup but it’s so worth it. You can flavor all kinds of herbal teas and drinks with this delightful sweet syrup. Blackberries and gin bring the party together in a sipper that goes down very, very easy. You can leave out the gin but it’s so darn good in this drink you might not want to!

 

Iced Blackberry Sipper Recipe

 

ROSEMARY LAVENDER SYRUP
• 1 ½ cups of sugar
• 1 ½ cups of water
• 1 medium sprig of rosemary
• 3-4 fresh lavender heads or 1 teaspoon of dried lavender

HOW TO:
• Add water, sugar, rosemary and lavender to a saucepot and bring to a boil
• Simmer for 4-5 minutes or until the sugar has dissolved and thickened slightly
• Remove from heat and cool

FOR EACH SIPPER:
• Meanwhile muddle/mash 5 or 6 blackberries in each cocktail glass
• Fill the glass halfway with ice
• Add 2 splashes of gin and 1 tablespoon of rosemary lavender syrup to each glass
• Add a squeeze of fresh lemon or lime if desired and top with a splash of either water or club soda.
• Garnish with rosemary and lavender and enjoy!

TIPS
• Once cooled, strain, bottle and store rosemary lavender syrup in the fridge for up to a month. Use it to sweeten, teas and drinks or drizzle it over fresh fruit and berries. Add to homemade blackberry vinaigrette and spoon over a summer berry salad.
