Fruit tea lollies are a refreshing summertime treat for both little and big kids alike! Choose the fruit or berry flavour you love, add sweetener if desired, and you have an iced lolly that’s as pretty to look at as it is healthy and delicious to eat. Add a few fresh berries to your lollies or mix flavours for a twist on classic flavours. Add an optional splash of sweet liqueur in place of honey for the big kids!

 

Iced Fruit Tea Lollies

INGREDIENTS
• 8 heaped teaspoons of your favourite Culinary Blossom Fruit Tea
• 3 ¼ cups of pure water brought to a rolling boil
• Juice of ½ lemon or 1 lime
• Honey or sweetener of choice
• 6 cup mould or 6 paper cups
• 6 wooden sticks
OPTIONAL: For the big kids add an ounce or two of sweet liqueur. No more or they won’t freeze properly and you’ll have slushies instead of lollies

HOW TO
1. Add tea to a heat-proof pot or teapot
2.  Pour in freshly boiled water and steep for 30 – 60 minutes
3. Strain the tea and add lemon or lime juice
4. Add sweetener of choice (to taste)
5. Add berries to moulds if using (see tips below)
6. Pour steeped, sweetened tea into the moulds
7. Freeze partway
8. Add the wooden sticks once the lollies are half frozen (so the sticks stand up in the middle)
9. Return to the freezer and freeze until solid
10. Unmold and serve. If serving family style place lollies on a bed of ice cubes

TIPS
• Colour of the lollies will vary depending on the fruit tea you choose
• Try mixing 2 different flavours Ex. Strawberry Passion with Mango Tropical Punch
• Add a few fresh sliced strawberries, blueberries or raspberries to each mould then fill with cooled tea
(NOTE: If adding fresh berries cool the tea first so you don’t cook the berries with hot tea)
• Switch out the mould for an ice cube tray and make flavourful tea cubes to add to drinks, iced teas or sparkling water
