Organic Calendula

Calendula is a lovely, versatile flower that can be enjoyed fresh or dried, steeped into teas, used in recipes, or crafted into creams, lotions and tinctures. The infusion is a slightly peppery, beautiful yellow colour often used in the culinary kitchen as 'faux' saffron. Calendula has strong health properties, which include antifungal and antimicrobial, as well as anti-inflammatory and antioxidant components. Add calendula to other teas to increase health benefits.

Culinary Uses: Baking, sweet and savory recipes, is a natural yellow food dye

Culinary Tip: Substitute the water in recipes with steeped calendula tea. Use it in soups, stews, rice dishes or to steam veggies. Brew a strong tea and use it as a substitute for saffron.

Brewing Calendula Hot:
• Bring fresh cold water to a rolling boil 100C/212F.
• Put 2 heaped teaspoons of calendula for each 8oz (237ml) cup into a mug or teapot
• Pour boiled water over tea and let steep 5 -10 minutes, longer for maximum benefits
• Strain and sweeten if desired

Making Iced Calendula:
• Bring fresh cold water to a rolling boil 100C/212F
• Put 3 heaped teaspoons of calendula for each cup (8oz/237ml) into a teapot or heat-resistant pitcher
• Add boiled water and steep for 30+ minutes (or up to overnight in the fridge for maximum strength)
• Strain, sweeten to taste, chill and serve
