Spring Greens Savoury Scones 🌿

INGREDIENTS
• 2 cups all-purpose flour
• 1 tbsp baking powder
• 1/2 tsp salt
• 1/4 tsp black pepper
• 1/2 cup cold butter, cut into chunks
• 1/2 cup spring greens (dandelion, nettle, soft baby kale) washed, patted dry and chopped.
• 1/4 cup chives, chopped (or spring green onion tops)
• 1 large egg, lightly beaten
• 1/2 cup heavy whipping cream + 1 tbsp to brush the tops
• 3/4 cup grated cheddar cheese
• 1/2 tbsp grated lemon zest (optional)
OPTIONAL ADD IN: 1/4 cup of sweet red pepper, chopped
HOW TO
1. Preheat oven to 400˚F. Line a large baking sheet with parchment paper. In a large bowl, sift together flour, baking powder, salt and lemon zest, if using
2. Add butter pieces and using a pastry cutter (or 2 knives), cut butter into mixture until you have coarse pea-sized crumbs.
3. First, stir in the cheddar cheese, then gently mix in the chopped spring greens and chives until incorporated. Now make a well in the center and set aside.
4. In a medium bowl, whisk together 1 egg and 1/2 cup heavy cream. Pour the egg mixture into the well in the flour mixture and use a spatula to stir just until moistened. Do not over mix or scones will be tough
5. Turn dough out onto a floured surface and pull it together into a round disk, about 3/4″ to 1” thick. Cut the disk into 8 wedges and place them on the parchment lined baking sheet. Brush tops of scones with 1 Tbsp heavy cream and sprinkle with coarse salt or a pinch of black pepper if desired.
6. Bake 15-17 minutes until golden (mine took 16 minutes). Remove scones from the baking sheet and place on a cooler rack. Let cool for 15 – 20 minutes before serving
• Serve warm with a dollop of fresh creamery butter and a cup of your favourite green or herbal tea.
• Spectacular with a fresh cream of asparagus soup and side salad. Enjoy!
