Pumpkin Chai Spice Cream Foam

INGREDIENTS
• 3 Tablespoons heavy cream (33-36%)
• 1 Tablespoon whole milk
• 1 Tablespoon maple syrup
• 1-2 drops of pure vanilla
• 1 Pinch of good quality salt
• Scant ¼ Teaspoon of Ground Chai Spice or pumpkin pie spice
OPTIONAL: 1 teaspoon pure pumpkin puree (save a teaspoon before you make your pumpkin pie)

HOW TO
• Put all ingredients in a glass measuring cup
• Use a handheld milk frother – whip the mixture until slightly thickened but still easy to pour
• Pour over your favourite chai, latte or hot chocolate
• Dust with Ground Chai Spice , pumpkin spice or ground cinnamon
• Mmm- Mmm delicious!

TIPS & VARIATIONS
• Substitute vanilla in the recipe with a teaspoon of spiced rum or brandy for an adult twist
• Use oat or almond milk to make a lighter, dairy-free version (froth thickness may vary)
• Foam is best served immediately but can be gently reheated if needed
