White Tea and Pear Mock-tail with Thyme
A festive, elegant mocktail perfect for celebrating New Year’s Eve or New Year’s Day. This drink combines white tea, fresh pear, aromatic thyme, and warm cinnamon, topped with sparkling water for a bubbly, sophisticated touch.
MAKES ONE WHITE TEA MOCK-TAIL
INGREDIENTS
• 1 cup of White Tea, brewed and cooled. Try our Kenya Silverback White Tea
• 1 Small ripe pear
• 2 Tsp. sweet ginger syrup or honey or agave (to taste)
• 1 Tsp. fresh lemon juice
• 1 Sprig fresh thyme
• 1 Cinnamon stick
• Ice cubes or frozen white tea cubes
• Sparkling water or club soda, to top
• 1 Pear vertical slice and thyme sprig, for garnish
HOW TO
- Brew the White Tea:
- Begin by brewing the white tea. Set aside to cool
Brewing Temperature: 85ºC/185ºF. Bring pure water to the boil 100ºC/212ºF and let it cool down to 85ºC/185ºF.
Steep Time: 3-5 minutes
- Begin by brewing the white tea. Set aside to cool
- Prepare the Pear:
- While the tea is cooling, take a vertical centre slice from the thickest part of the pear. Then peel, core, and dice the remaining pear into small chunks. If you prefer a smooth texture – blend the pear into a puree
- Muddle the Pear and Thyme:
- In a cocktail shaker or glass, add the diced pear and a sprig of thyme. Gently muddle them together using a muddler or the back of a spoon to release the juices and aromatic oils
- Combine the Ingredients:
- Add the cooled white tea, and sweetener of choice (if using), and lemon juice to the pear and thyme mixture. Fill the shaker or glass with ice cubes and shake or stir to combine
- Strain and Serve:
- If you prefer a smooth mock-tail, strain the mixture into a glass over fresh ice cubes. For a chunkier, more textured drink, skip the straining step
- Top with Sparkling Water:
- Top the drink with sparkling water or club soda for a bubbly finish. Stir gently to combine
- Garnish and Enjoy:
- Garnish with a slice of pear, sprig of thyme and cinnamon stick
TIPS
• For an extra touch, rim the glass with sugar and finely chopped thyme leaves before pouring the drink
• The white tea can be substituted with Green or Oolong tea if you prefer a different base flavour
• Make a pot of tea to easily multiply the recipe!
