A refreshingly delicious iced tea with the classic taste of premium Orange Pekoe and fresh citrus makes this iced tea a summer favourite. Extras store well in the fridge, so double or triple the recipe and an ice-cold glass will be ready anytime you are!

INGREDIENTS:
*4 heaped Tbls. Organic English Breakfast Tea
* 4 Cups pure water, boiled
* 3-4 Tbsp. local honey (sweeten to your taste) or sweetener of choice
* Juice of 1-2 lemons or oranges
* Slices of 1 lemon or orange
* Sprigs of fresh mint or basil
* Lots of ice

INSTRUCTIONS
• In a large pot bring water to a full rolling boil
• Turn off heat and add in tea
• Cover and steep for 4 – 5 minutes (or until desired strength is achieved. The longer black tea is steeped, the more tannins are pulled from the tea leaf and the more astringent the tea will be.)
• Strain into a heatproof pitcher and stir in honey or sweetener of choice to melt
• Let the tea cool and store in the fridge
• Once chilled add the juice of 1 – 2 lemons and/or oranges to the tea
• Add extra sliced lemons, oranges or limes ( or all 3)
• Fill a glass or glasses with lots of ice, pour in tea and garnish with fresh herbs
• Enjoy!

SERVINGS
Makes 4 servings of iced tea

TIPS
• Recipe can be doubled or tripled and stored in the fridge. Tea will keep for 2-3 days
• Make extra iced tea and freeze it into tea cubes. Use instead of water ice cubes for iced tea or drinks
• Add a splash of gin or vodka and a drizzle of orange liqueur for a dynamite cocktail. Garnish with orange slices and basil
• Add a splash of gin or vodka and a drizzle of lemon liqueur for an equally tasty drink. Garnish with lemon slices and mint
